If you enjoy cellaring your wines to see how they evolve with aged characters, Carnival of Love has plenty of beautiful fruit and structure to last for years. Harvey Steiman at Wine Spectator suggests that it will age well for about 10 years and will drink great now through 2017.
Pairs with Rack of lamb with a cherry reduction jus on saged polenta. An incredibly balanced wine which surprisingly goes well with almost anything, but especially with fine red meats and good friends.
